to offer some of the greats like La Fleur-Pétrus, Trotanoy and Vieux Château Certan. Those connoisseurs on the inside track will be looking for the gorgeous Sauvignon Blanc/Sémillon white Bordeaux. There is always a small, but well-chosen selection of racy whites ranging from those that are ready to drink with fresh seafood tonight, such as Clos des Lunes Lune d’Argent, and those that will become complex and toasty with 3-5 years in the cellar, such as Château Smith Haut Lafitte. Even rarer than the whites of Bordeaux are the exciting sweet wines from Sauternes and Barsac. These wines are incredibly complex with dense flavours of tropical fruit, ripe citrus and exotic herbs. Châteaux Doisy Daëne and Doisy-Védrines are both excellent examples. Drink them with something savoury like aged cheese.
