A fter aging for more than two years in their French cellars, the 2021 Bordeaux are arriving in British Columbia and will be ready to release into BCLIQUOR on September 28 th , 2024. As a Category Manager who had only tasted the ’21s in their extreme youth, it is interesting for me to see how they are now developing, gaining complexity and shaping into wines of character and regionality. Like all buyers who purchase Bordeaux en primeur , I’ve learned how to assess quality and extrapolate the wines’ future progress. Nonetheless, each year brings exciting surprises. In the modern context of rising temperatures and water shortages that are causing issues in growing regions around the world, 2021 was exceptional. Spring frost reduced quantities in many appellations of Bordeaux while periodic rain throughout the rest of the summer extended the growing season and produced grapes with naturally lower alcohols and higher acids. 2021 is a vintage that, generally, will have more restraint than recent warm vintages and the best examples will show lovely finesse and purity. It is also a year where the particular attributes of each appellation, and even each plot of land, can show through in a wine’s individuality and character. Many of the Cabernet Sauvignon-based wines of the Left Bank will benefit from further cellaring even if they are already hinting at their potential. Firm structure balanced by dark berry fruits, sweet cedar and herbs will characterize many of them with each Château leaving its imprint. Château Phélan Ségur, for instance, has lovely floral notes overlaying dense cassis fruit, while further south, in St-Julien, Château Léoville Poyferré has plusher, more open black fruits. One of my favourite appellations is Pessac-Léognan where the wines tend to be more restrained and always have a throughline of minerality from

the nose to the palate. Château de France offers true regionality in the glass at exceptional value while Domaine de Chevalier remains an absolute classic that will reward ten more years of bottle maturation. Volumes of Merlot on the Right Bank are down as a result of the April frost but we were still able to source British Columbia’s favourite Bordeaux. From Fronsac, Châteaux La Vieille Cure and La Dauphine offer ripe plum fruit with chocolate nuances at excellent prices. For the collectors, we also have tiny quantities of the great producers including Château La Fleur-Pétrus from Pomerol and Château Angélus from St. Emilion. Popularity of white Bordeaux around the globe means we didn’t have large allocations in 2021 but we do have top Châteaux represented. Look for zippy acidity, citrus notes, creamy texture and subtle toast aromas. Châteaux Carbonnieux and Ferran are classics that will make for excellent drinking in 2-5 years. The vineyards of Sauternes and Barsac were hit particularly hard by the spring frost making them more precious than ever. If you purchase a bottle of the spectacular and racy Château Coutet or silky Château Suduiraut it will be delicious with salty snacks that night or with an aged cheese plate ten years from now. As a result of demand from customers across the province, the Bordeaux Release has now been expanded to 56 BCLIQUOR locations. Vertical Tasting One of the fascinating things about Bordeaux wine is the variation between vintages. Warm weather vintages will often yield rich, full- bodied and fruit-driven wines, while cooler vintages will often result in more earthy, dried herbal and savoury wines. Conducting a vertical tasting consists of getting together a number of different vintages of the same wine and comparing them. Being able to create vertical tastings is one of the benefits of having a cellar and buying the same wines every vintage. Taste blind and see if you can taste the difference in warmer versus cooler years. Storing Bordeaux Wine Many Bordeaux wines are known for their ability to age, so it is important that they are stored correctly. The key element of storage is to have a cool, constant temperature, ideally around 13-14°C (55-57°F). The constant part is more important than the exact temperature. This allows a wine to age gracefully, developing all of the complex flavours and aromas you would come to expect. The wine should be kept away from bright light that may heat the wine or fade the labels. Anything sealed with a cork should be on its side to keep the cork from drying out. You may be lucky enough to have a cool basement with ideal cellaring conditions or you may choose to purchase a wine cooler that controls temperature and humidity. Great Pairings with Bordeaux While the vast majority of Bordeaux wine is dry red, there are some high quality dry white and sweet botrytis-affected dessert wines, such as Sauternes, that are also produced. Red Bordeaux : These wines have structure and power and are best paired with robust red meats. Classic pairings are roast or grilled beef or roast leg of lamb. Wines that have some age pair well with roast game birds or duck. White Bordeaux : Often partially oak-aged and rich, yet still lively and refreshing, these wines are best paired with rich white fish, lobster or roast chicken stuffed with lemons. Sauternes : Rich and sweet, these wines pair beautifully with peach-, pear- or apple-based desserts, crème brûlée and foie gras. Try with blue cheese for a savoury option. Decanting There are two main reasons for decanting wine. The first is to remove any sediment that has formed during the ageing process. The second is

to aerate a young wine to hopefully soften up some of its rough edges, making it taste smoother and smell more aromatic. To aerate a young wine, simply pour the bottle into a decanter, not worrying if it splashes in and gets plenty of air. To remove sediment, a bottle should first sit upright for around 24 hours to let any sediment gently settle to the bottom. Carefully open the bottle without disturbing the sediment. Pour the wine slowly and steadily into the decanter, watching the shoulder of the bottle and stopping when you see sediment appearing or when the wine looks cloudy. Old corks can often crumble in which case you can use a filter to catch any pieces of cork. A candle or flashlight shining on the shoulder of the bottle makes it easier to see the sediment. A general rule is that the older and more delicate the wine, the shorter the time should be between decanting and serving as older wines can lose their freshness quickly. Left Bank or Right Bank? Bordeaux is situated around the Gironde estuary and its two rivers the Dordogne and Garonne. The area west of the Gironde and Garonne is known as the Left Bank while the Right Bank is the name used for the vineyards located on the north and east side of Gironde and the Dordogne. In between the two rivers is the Entre-Deux-Mers appellation. The Left Bank is where Cabernet Sauvignon is usually the dominant variety in the red blends and is the home of the famous appellations of the Médoc such as St‑Estèphe, Pauillac, St‑Julien and Margaux as well as those further south – Pessac‑Léognan and Graves. The Right Bank châteaux are generally smaller and the climate and soils are more suited to Merlot and Cabernet Franc rather than Cabernet Sauvignon. Château d’Aiguilhe, Bordeaux (L) “Offering up aromas of sweet cherries, dark berries, licorice and flowers, the 2021 d’Aiguilhe is medium to full-bodied, concentrated and polished, with a tangy spine of acidity, beautifully refined tannins and a long, penetrating finish. This is a terrific effort from the von Neipperg family’s organically farmed Castillon estate.” 89-91 pts, Wine Advocate 430237 6 bottle limit $50 2. Alter Ego de Palmer, Margaux “Lush berry aromas and layers of wood give this second-label wine its rich character. Château Angélus, St-Émilion Grand Cru (L) “Rich and dense aromatics, lovely black cherry and dried flowers, the Cabernet Franc bringing all the aromas. Supple and smooth, so alive in the mouth yet this has density and depth, something to chew on. It’s not plush, but there’s texture from start to finish, with delicacy and finesse to the expression. A highly drinkable Angélus that has really benefited from dialling back on the power. Great freshness and precision, while feeling as if it will age well. Château d’Armailhac, Pauillac (L) “Smells heady, black bramble fruit on the nose, fragrant black cherries, a dusting of clove and cinnamon spice, orange peel - slightly bitter but juicy with a hint of toast too. Quite tight and lean, direct and focussed, this is streamlined - you can feel the cool blue fruit and slightly tense tannin structure, seamless but all held in one line in the centre of the wine. A little strict, but pure, precise and clean. There is lovely clarity to the expression, a silky texture with mouthwatering acidity. Tastes fresh and lively and so clean with that moreish salty and menthol tang that lingers on the tongue. Sleek with a really long finish. Really intense flavours that coat the mouth - cinnamon, clove, redcurrants, cherries, blueberries and blackcurrants. Cola and liquorice lingers on. Château Beau-Séjour Bécot, St-Émilion Grand Cru (L) “The 2021 Beau-Séjour Bécot has realized all the potential it showed from barrel, unfurling in the glass with aromas of wild berries and plums mingled with notions of violets, lilac, forest floor and spices. Medium to full-bodied, deep and pure, with a fleshy core of fruit that’s framed by supple, polished tannins and bright acids, it’s seamless and sensual, concluding with a long, mouthwatering finish. Incredibly well textured, alive and forward in the glass, this has energy and lift. A really pure and precise bite to the fruit with excellent acidity and style. Château Belgrave, Haut‑Médoc (L) “Aromatic and expressive nose, perfumed and black-fruited with dark chocolate and clove. Supple and agile, a lively character but with a stony undercurrent that provides the grip and texture in the mouth. 11. Château Bellegrave, Pomerol “This small estate in the heart of Pauillac has produced a perfumed, polished wine. Wood aging and black fruits are still prominent and need to soften. It is a fine wine from this major appellation. Drink from 2026.” 92 pts, Wine Enthusiast 450136 $90 12. Château Berliquet, St-Émilion Grand Cru “The 2021 Berliquet is showing very well in bottle, wafting from the glass with notes of sweet wild berries, plums and rose petals, framed by subtle hints of licorice and vanilla pod. Medium to full-bodied, fleshy and seamless, it’s suave and sensual, with a fleshy core of fruit, ultra-refined tannins and a pure, perfumed, mineral finish. 15. Château Le Bon Pasteur, Pomerol (L) “The 2021 Le Bon Pasteur was impressive both times I tasted it. Vibrant and deep, the 2021 offers up generous red cherry/plum fruit, rose petal, spice, mint and licorice, all with a sense of exoticism that is hard to miss. There’s a feeling of real energy and vibrancy I don’t recall seeing here previously. The 2021 is one of the best vintages in recent memory. Sadly, yields are just 20 hectoliters per hectare. What a pleasant surprise the 2021 is. Don’t miss it.” 93-95 pts, Vinous 436662 6 bottle limit $170 16. Château Le Boscq, St‑Estèphe “This 44-acre estate is dominated by its rich Merlot. This new release is dense and solid with tannins that will need time. It is a full, ripe, finely chiseled wine that should be ready from 2027.” 92 pts, Wine Enthusiast 435873 $65 17. Château Bourgneuf, Pomerol “Clear and clean in the glass, a light colour, almost translucent. Floral and fruity, notes of roses and violets with raspberries and red cherries. High acidity, salty, gripping tannins and a menthol undercurrent. Quite a pretty, delicate take on the vintage for Pomerol, really haven’t pushed this, tannins are a touch grippy and grainy but this balances out to a finish with high-toned red berry fruit and lots of wet stone salty, minerality. Château Boyd Cantenac, Margaux (L) “Damson and smoked oak on the nose, sweet fruit on the opening beats and this is richer than many you will find in the appellation, with well- worked tannins. A gourmet feel, not quite masking the high acidities that appear on the finish, closing things down. 19. Château Branaire-Ducru, St‑Julien (L) “The 2021 Branaire-Ducru has realized all the potential it showed en primeur . Wafting from the glass with aromas of dark berries, plums, menthol, violets and baking chocolate, it’s medium to full-bodied, supple and suave, with a velvety attack that segues into a deep, fleshy palate. This is especially impressive in the context of the vintage.” Drink 2025 - 2041 94 pts, Wine Advocate 436681, 450120 6 bottle limit $100 20. Château Brane-Cantenac, Margaux (L) “The 2021 Brane-Cantenac offers up aromas of sweet dark berries mingled with mint, vanilla pod and spices. It shows its élevage and malolactic fermentation in new oak more prominently than it did en primeur . Medium to full-bodied, with good depth and concentration, it’s bright and velvety, with plenty of structuring barrel tannin and a vanillin-inflected finish. Château La Cabanne, Pomerol “Sharp and high toned, tangy straight away with a hit of buzzy red fruit, it’s light but pleasurable, some slightly dry and salty tannins but overall this has a nice fun character with a juicy core. 23. Château Calon Ségur, St‑Estèphe (L) “In the winery’s style, this is seriously dense with solid tannins and concentration. It is a powerful wine with a majority of Cabernet Sauvignon and Cabernet Franc that has structure and dense black fruits, The wine is likely to age well. Drink from 2028.” 97 pts, Wine Enthusiast 411937, 440996 6 bottle limit $250 24. Château de Camensac, Haut‑Médoc “Smooth and supple, fruity and fun, lifted strawberries and cherries fill the mouth before quite salty, mineral tannins take their place. But it’s clean and pure with a lovely finesse to the expression if not quite the persistence of fruit but this does have a long finish. This will be great in time, has the potential.” Drink 2026 - 2039 91 pts, Decanter 434293 $70 25. Château Canon, St-Émilion Grand Cru “The 2021 Canon shows just how magical the site is. Vertical and explosive in feel, with tons of pure power, it impresses with its intesity, drive and super-classic profile. Bright saline notes and vibrant tannins give the 2021 a feeling of energy that only gains momentum with time in the glass. It’s not an easy Canon, like the 2015 or 2018, but it is incredibly expressive. It is sort of wine that only truly emerges with time in bottle. I would be thrilled to own it. Canon must surely be one of the great relative values in first-class wine. Wow. Tasted two times.” Drink 2031 - 2061 97 pts, Vinous 435782, 450142 $275

26. Château Canon la Gaffelière, St-Émilion Grand Cru (L)

“This has a gorgeous herbal-fruity nose, scented, fresh and lively with raspberry leaf. Impactful on the palate straight away - the fine-grained tannins hit the mouth and expand slowly alongside the liquorice spice and dark berry fruit with violet aromas. It’s direct and linear at the moment, taut, and driven in one line. You feel it’s coiled up ready to spring with strawberry fruit and the Cabernet aspects coming through. It’s delicately textured, the mouthfeel is light and bouncy while the flavours slowly expand vertically. Touches of sweetness, bitterness and minerality appear adding interest from start to finish. I love the clarity you get. Impactful and full of complexity. Will be lovely to taste this in bottle. 5% more Cabernet Franc and 5% Cabernet Sauvignon than usual as some Merlot was lost to frost and mildew. Château Cantenac Brown, Margaux (L) “Gorgeous fragrance and florality on the nose with ripe and perfumed black fruit and some peony touches. Smooth and supple, nicely weighted with lovely finesse and concentration to the fruit - blackcurrant, cherry and raspberry - with really juicy acidity. A lovely almost creamy aspect to the texture with just grippy and spiced tannins towards the finish. Nice aspect of oak throughout showing the ageing potential. 29. Château Carbonnieux, Pessac‑Léognan

“Sweet strawberry and red cherry fruit on the nose with some bramble notes. This lacks a little power and depth but offers gentle cooling blue fruit with a nice juicy acidity - blueberries, black cherries and blackcurrants with fine tannins and a persistent soft grip that carries the flavours from start to finish. It’s well balanced with a light frame and you get the coolness of the vintage through with the minerality on show. 3% Petit Verdot completes the blend.” Drink 2024 - 2035 89 pts, Decanter 450211 $85 30. Le Carillon d’Angélus, St-Émilion Grand Cru “Beautifully expressive aromatics, really jump from the glass, alive and nuanced, floral, fruity - rosehip, cranberry, cardamom, cinnamon. Supple and lithe, this has movement to it which is so nice. Not super tense and straight, not dense and chewy, somewhere in-between with bright, mouth-watering acidity that lifts the expression. Hints of chalky minerality on the finish brings it back to focus with a moreish aspect. Tannins are great, barely noticeable but still giving the frame and support to the structure. Well delivered. Gorgeous purity, balance and harmonious, really lovely drinking here.” Drink 2026 - 2035 93 pts, Decanter 435790 $225 31. Château Les Carmes Haut‑Brion, Pessac‑Léognan (L) “A gorgeous aromatic display draws you in: crystalline, floral with iris, peony and violet, herbal, earthy and fruity. Sumptuous, this is a classy wine, beautifully smooth but with powdery tannins that give grip and intensity to the structure. It’s grippy at the moment, not as ethereal or silky as some right now, but it’s characterful with power, all while being nuanced and detailed. Charming but still yet to fully come out of its shell. Crunchy, great energy and focus with salty minerality on the finish. This will be a beauty.” Drink 2027 - 2050

Carruades de Lafite, Pauillac (L) “The 2021 Carruades de Lafite is mostly composed of the younger replacement vines dotted throughout Lafite’s vineyards on the plateau, which are harvested separately. Offering up aromas of red berries, cassis, cedar box and orange rind, it’s medium to full-bodied, lively and layered, with good concentration and a long, penetrating finish. It’s a blend of 55% Cabernet Sauvignon, 36% Merlot, 4% Petit Verdot and 5% Cabernet Franc, part of which was matured in wooden vats rather than barriques.” Drink 2027 - 2045 94 pts, Wine Enthusiast 412018 6 bottle limit $525 33. Château Certan de May, Pomerol (L) “The wine from this 13-acre vineyard is full of smoky, black-fruit aromas. It is fine with firm structure, some solid tannins and a fresh aftertaste.
